First Annual Cookie Recipe Exchange!!

My favorite cookie at Christmas time is soooo super easy and delish. To me, it wouldn't be Christmas without them! Our family has enjoyed them every year (along with many other cookie varieties) for as long as I can remember and I'm looking forward to making them again with my mom in a few weeks :) They are cravable enough to eat all year long.. but I always save them for a special Christmas treat!
Peanut Butter Ritz Cookies
1 Box of Ritz crackers1 jar smooth peanut butterchocolate - can use chocolate chips, chocolate bark, Hershey's bar.. we've used it all and it all works. It just needs to be 'meltable'.
Step 1 - Spread a good amount of peanut butter between 2 Ritz crackers (salty side out).
Step 2 - Melt chocolate in double boiler (or heatproof mixing bowl over saucepan of simmering water) on stovetop.
Step 3 - Dip Ritz PB 'sandwich' in melted chocolate using a slotted spoon or fork.. or whatever you have that will get it out of the chocolate. Cover it completely. I usually drop in a couple, flip them around, then fish them out.
Step 4 - Place on wax paper till chocolate hardens. If you like them fancy, while the chocolate is still gooey, add some festive sprinkles.
Step 5 - Enjoy!!!
